Three Cheese Pizza

Recipe Serves: 4
Preparation time: 10 mins
Cooking time: 20 mins

Ingredients

25 cm stone baked pizza base (bought)
1 tbsp olive oil
1 red onion, sliced
1 clove garlic, finely chopped
5 tbsp chunky passata
1 tsp Italian mixed herbs
salt and freshly ground black pepper
50g British Mature Cheddar Cheese, grated
50g Red Leicester cheese, grated
tomatoes, sliced
50g Blue Shropshire or Stilton Cheese, crumbled
6-8 fresh basil leaves

Recipe for Three Cheese Pizza

 

Method

Preheat the oven to 200ºC, gas mark 6. Place a large baking tray in the oven to heat up.

Heat the oil in a frying pan and sauté the onion and garlic until soft and translucent. Stir in the passata and Italian herbs and reduce the sauce a little so it’s moist but not too wet. Season with salt and pepper.

Spread the tomato sauce over the base of the pizza.

Mix the Cheddar and Red Leicester cheeses together and sprinkle over the tomato base. Arrange the slices of tomato over the cheese. Dot small mounds of the Blue Shropshire over the pizza base.

Place the pizza onto the preheated baking tray and cook for about 12-15 minutes until all the cheeses have melted and are bubbling.

Remove from the oven and scatter the basil leaves over the pizza.

Serve in wedges with a mixed green salad .
