Brie Baked Potatoes

Recipe Serves: 4

Ingredients

4 baking potatoes
55g (2oz) Somerset Brie
½ tsp dried chives
½ tsp salt
1 egg yolk
55g (2oz) butter

 

Method

1 Wash the potatoes and bake them in their jackets at Gas 4 (180° C , 350° F) for approximately ¾ hour or until cooked through.

2 Remove the potatoes from the oven and slice approximately ½ inch lid from the top flat side of each potato. Scoop out the middles to within ¼ inch of the jackets, taking care not to pierce the skin.

Arrange the jackets in a roasting tin.

3 Put the scooped out potato into a mixing bowl. Add the Somerset Brie, chives, salt, egg yolk and butter and beat with a wooden spoon until mixed well.

4 Spoon the mixture back into the jackets, piling it up and rounding the tops.

5 Place the potatoes in an oven pre-heated to Gas 5 (190° C, 375° F) and bake for approximately 10 to 12 minutes or until the top of the filling is golden brown.
