Method
Preheat the oven to 200º C, gas mark 6.
Have ready a large shallow oven-proof dish.
Layer the apples, 100g of the cheese, cinnamon, soft brown sugar
and raisins in the dish.
Put the flour, butter, caster sugar and remaining cheese into a
food processor and process together for a few seconds until the
mixture resembles fine breadcrumbs.
Alternatively rub the butter into the flour by hand and stir in
the sugar and cheese to achieve a crumble mixture.
Sprinkle the crumble mixture over the apples, pressing down
lightly, Bake for about 30 minutes until the top is a rich golden
brown.
Serve hot or cold with fresh cream or custard.
