Mackerel with Kumquats

Ingredients

4 x 340g (12oz) whole mackerel, fresh or defrosted, cleaned and heads removed
200g (7oz) kumquats, washed and sliced salt and pepper

SERVES 4

Tip: Kumquats are readily available at your local supermarket, but if preferred use orange slices instead of kumquats.

Mackerel with Kumquats

Method

Preheat the barbecue or grill

1 Make diagonal cuts across the skin of the fish.
2 Fill the cut sections of the skin and the fish cavity with slicts of kumquats. Rub some of the remaining kumquats over the skin of the fish for extra flavour. Season.
3 Cook for 10 minutes each side over a low heat.
4 Serve with a couscous salad.
