Herring Kebabs

with Fresh Fruit

Ingredients

4 x 17og (6oz) herring or mackerel fillets, fresh or defrosted, cut into 2.5cm (1") cubes
selection of 2 fresh fruits (e.g. mango, bananas, apples), peeled and chopped

Marinade

3 x 15ml spoon (3 tablespoons) orange juice
4 x 15ml spoon (4 tablespoons) sunflower oil salt and pepper
1 x 5ml spoon (1 teaspoon) soy sauce
1 x 15ml spoon (1 tablespoon) honey

SERVES 4

 

Herring Kebabs

Method

Preheat the grill

1 Thread the fish and fruit alternately onto skewers.
2 Mix together the marinade ingredients and pour over the kebabs. Marinate in the refrigerator for approximately 30 minutes.
3 Grill the kebabs under a moderate heat for 6-8 minutes, turning occasionally brushing with the excess marinade, if necessary.
4 Serve with a rice salad.
