Baked Scallops

Serves 4 - Cooking Time: 10 Minutes - Ready to eat in 1 hour 15 Minutes

Ingredients

12 Large King Scallops, cleaned and shucked

Marinade

150ml (5fl oz) coconut milk
1 stalk of Lemon Grass, finely chopped
1 clove garlic, crushed
1 red chilli, finely diced
1 lime - rind only
1 x 15ml spoon (1 tablespoon) lime juice
15g (1/2 oz) fresh chopped coriander
1 x 15ml spoon (1 tablespoon) fish sauce

Nutritional values per portion (approx) 159 kCal; 29g Protein; 2g Fat; 6g
Carbohydrate; 0g Fibre

 

Baked Scallops

Method

Preheat the oven to 190°C/ 375°F/ Gas Mark 5

1. Lay the scallops in a suitable dish. Mix together the marinade ingredients and pour over scallops. Cover and chill for 1 hour
2. Cook for approximately 10 minutes, or until scallops are just cooked.
3. Serve on a bed of noodles.

Tip: Avoid over-cooking the scallops as they will become tough.
