Vanilla Sugar

This is a simple recipe for making a versatile alternative to using plain sugar. Try it sprinkled onto baked fruits, doused in wine or brandy or to make vanilla sauces or custard.

1 Kg granulated sugar
5 vanilla pods

Choose 5 fresh vanilla pods. Place them in the bowl of a food processor and chop until they are into fine pieces. Add the sugar to the processor bowl and continue to blend together.

Seive the blended contents through a course sieve and return any remaining pieces to the blender along with a portion of the sieved mixture.

Continue until the sugar and vanilla pods are blended into an ash coloured mixture.

Store in an airtight container and use as required.
