One of a number of variations on this popular Indian
fried bread. Serve as an accompaniment to curries or dhalls.
3 cups of chapatti four (ata)
6 tbsp melted butter or ghee
1.5 cups of warm water
Pinch of salt
Seive the flour and add the salt.
Rub 2 tablespoons of melted butter into the flour
until it resembles breadcrumbs
Gradually add warm water to make a soft dough. Cover
the dough mixture and set aside for at least 10 minutes.
Divide the dough into eight portions and form each
into a ball and then roll out into circles.
Brush each circle with melted butter and fold over
into a half circle.
Brush again with melted butter and fold over once
more into a triangle.
Roll out the triangular shape.
Grease a hot griddle or tava (frying pan) and place
the rolled out bread onto it.
Fry for 1 minute approximately on each side. It may
be necessary to turn more often to ensure thorough cooking and prevent
burning.
